Ingredients:
- 1 lb (450g) ground beef
- 1 medium onion, diced
- 3-4 medium potatoes, diced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup shredded cheddar cheese (more if you like it extra cheesy)
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp paprika
- Green onions or parsley for garnish
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Cook the Beef:
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain any excess fat.
- Season the Beef:
- Add garlic powder, paprika, salt, and pepper to the beef mixture. Stir to combine.
- Prepare the Casserole:
- In a large mixing bowl, combine the diced potatoes, diced tomatoes, and cream of mushroom soup. Mix well.
- Add the cooked beef and onion mixture to the bowl and stir to combine.
- Assemble the Casserole:
- Transfer the mixture to a greased 9×13 inch baking dish.
- Cover the casserole with foil and bake in the preheated oven for about 40-45 minutes, or until the potatoes are tender.
- Add the Cheese:
- Remove the foil and sprinkle the shredded cheddar and mozzarella cheeses evenly over the top.
- Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Garnish with chopped green onions or parsley before serving.
