  • 16 drops EZ-Sweetz (1/3 cup sweetener equivalent)
  • 1 Tbsp Lemon Juice
  • ¼ tsp Vanilla Extract
  • 3 Oz Cream Cheese
  • 8 strawberries (100g)
  • Around ¾ cup ice (194 g)

INSTRUCTIONS:

  1. Place all ingredients in the Vitamix in the order listed.
  2. Using the variable speed section, start on 1 until the solids have been pulverized.
  3. Slowly rotate to 10 while using the tamper to push the ingredients into the blades.
  4. Blend for 30-60 seconds until mounds form.

That’s it! Your low-carb ice cream is now ready to be served. This recipe is incredibly easy to make and only takes a few minutes in a Vitamix. It’s also versatile, so you can swap the strawberries for your favorite fruit or add a scoop of nut butter for an extra boost of flavor.
